This is a plant-based caramel, a miracle of maillard because to get caramel chocolate you need certain chemistry thingees found in dairy. Caramel, if you know it and adore it, has an umami-ness to it, which the black garlic (which doesn't say garlic in the way we think of garlic) bumps up a notch or three.
