Oh, the good ol days when we oldsters could dance the night away, despite forgetting our coat and not worrying whether we took our vitamin C.
I stuffed this bar full of everything I love about the American southwest, and the many years I called it home: roasted pinyon nuts add a nutty creamy campfire under the desert sky flavor that pairs so well with the Mexican cacao I’m sure they’re likely long-lost mates; a smokey hint from the paprika grabs the nuts as a dance partner, then candied poblanos stir in (baked into chewy + crispy bits after candying in a simple syrup—can I tell you right now I should be bottling up the chile syrup because holy mole! it’s worth it’s own party). Afterward I gave it all a blitz of black lava salt.
