There is a lot going on here, but despite all the drama, this bar is a quaint riff on a fall favorite apple spice cake, minus the cake bits (it’s gf), and filled with miso-dried apples (plus the pretty peels), and a rousing amount of bourbon candied cacao nibs. The miso adds a skitch of umami-ishness and bridges the sweet meets tart flavors. Next time I might dose the nibs with more bourbon (don’t ask where the rest went). And! spices of course, all the fall things.
