Lucky Day: lemon cheesecake with candied lemon zest and crust crumbs (plant-based and gf)

I made this bar as a special You’re How Old?!! birthday gift for a dear friend, and here’s the part I shouldn’t be telling you: I could not stop licking the melanger bowl after I poured the batch. Yes, yes I used a spatula (hello food safety) and yes of course the bowl went straight into the wash sink. I truly regretted not siphoning off a pitcher-full.

Confession aside, I haven’t stopped thinking about it since, so here, my dear chocolate adoring friends, it’s your lucky day too.

Crafted with hand-picked organic Meyer lemons from my family tree.

Made with organic cocoa butter, organic cane sugar, gf oats, candied organic Meyer lemon zest (lemon peel and organic sugar) and juice, topped (bottomed?) with graham crust (gf oats, sunflower oil, panela, cane sugar, tapioca, baking soda, sea salt).
